Non la classica pizza ma un impasto più morbido e dolce. Famose furono quelle della pasticceria Caviezel tanto che molti catanesi le definiscono proprio le "pizzette di Caviezel"

Ingredienti per 16 pizzette piccole
500 g di farina 0
35 g di strutto
50 g di zucchero
50 g di latte
25 g di lievito di birra
100 g d'acqua
1 tuorlo
10 g di sale
300 g di passata di pomodoro
300g di mozzarella
Olive nere
Olio
Sale
Pepe
Origano
Inserite nella planetaria la farina setacciata, lo zucchero e il lievito sbriciolato.
Lavorare a bassa velocità per amalgamare gli elementi. Aggiungete a filo metà dell'acqua e il tuorlo. Lavorate e quindi aggiungete il latte lo strutto e l'acqua rimanente. In ultimo aggiungete il sale. Lavorate a velocità media finché l'impasto non si staccherà dalle pareti.
Adagiate l'impasto su carta forno e formate delle piccole palline che porrete su una teglia coperta da carta forno. Coprite con un canovaccio e conservate in luogo caldo e privo di correnti d'aria. Quando saranno raddoppiate di volume allargatele con i polpastrelli formando dei dischetti. Coprite e fate lievitare per altri 15/20 minuti.
Riscaldate il forno a 190 gradi.
Preparate quindi il condimento: tagliate la cipollina a striscioline piccole e aggiungetela al pomodoro, salate e pepate. Affettate la mozzarella e tagliate le olive in due privandole del nocciolo.
Prima di infornare cospargete ogni pizzetta con un cucchiaio di salsa. Infornate per circa 15/20 minuti (dipenderà dal vostro forno) in modalità ventilata.
Uscite la teglia dal forno aggiungete la mozzarella e la meta dell'oliva. Rimettete in forno finché la mozzarella non si sarà sciolta. Quindi sfornate cospargete con un filo d'olio e servite!
